Salmon with Roasted Tomatoes

This Salmon is baked to perfection, with a light butter flavor and the sweet combination of roasted tomatoes.  This dish is wonderful for entertaining.

Ingredients

  • 2 lbs Salmon filet
  • 1 tbsp olive oil
  • 10-12 cherry tomatoes halved
  • 1 tbsp butter sliced thin
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh basil chopped
  • salt and pepper to taste

Instructions

  1. Preheat oven at 425 degrees.

  2. Rinse salmon in cool water, and pat dry with paper towels.  Place on foil or parchment lined baking sheet.

  3. Drizzle oil on salmon.

  4. Arrange tomatoes on salmon.  Add pats of butter.  

  5. Sprinkle with fresh herbs, salt and pepper

  6. Bake on middle rack of oven for 17-20 minutes.  Check readiness with fork in thick piece of salmon.  The fish should flake apart naturally when it is cooked.
