Blueberry Clusters with Macadamia Nuts

This simple three ingredient treat is a late night favorite in my house.  These chocolate clusters are versatile, and can be topped with any assortment of nuts, or coconut flakes.  Take liberties to make this treat something that suits your tastes.  I use Ghirardelli chocolate chips because they melt and reconstitute perfectly every time.

Ingredients

  • 1/2 pint fresh blueberries 6 oz
  • 1 cup dark chocolate chips
  • 1/2 cup roasted and salted macadamia nuts chopped

Instructions

  1. Wash blueberries and dry well.

  2. Chop nuts on a cutting board.

  3. Set blueberries baking sheet or large plate, lined with parchment paper.  Set the berries close together (touching) in groups of 3 or 4.

  4. Melt your chocolate by whatever method you prefer.  Do not scorch.  

  5. I heat 1/2 cup of chocolate chips in a small glass bowl for 20 seconds in the microwave, then stir. Then heat again for 20 seconds and stir until the last few chips melt completely.

  6. Using a small spoon scoop about 1 teaspoon of melted chocolate on about half of the blueberry clusters.  Don't worry about covering the berries completely.

  7. Melt the remaining 1/2 cup of chocolate chips, and repeat step 5 above until all the clusters are covered.

  8. Top clusters with chopped nuts.

  9. Chill in refrigerator for 10-20 minutes until hard.

  10. Store in airtight container in fridge.  These will last 2-3 days depending on the freshness of your berries when you started.
