The combinations of flavors in this Salmon with Roasted Tomatoes dish is phenomenal. The natural sweetness of the roasted tomatoes, with the pungency of the fresh herbs is teriffic. This recipe is a great example of simple fresh ingredients cooked together to perfection to make a memorable meal.
Baked salmon is a great dish to learn for beginners in the kitchen. I have been cooking salmon for many years. It was one of the dishes I perfected in my 20’s before cooking and I hit a rough spot. You can read about that in Never Enough Time if you’d like.
Part of why I am so excited to share this Salmon with Roasted Tomatoes recipe with you is because it’s quick and easy to prepare. The flavors of the roasted tomatoes enhance this basic baked salmon to be something that can’t be overlooked.
I find that using both oil and butter when baking salmon allows the perfect amount of moisture as well as a nice browned butter flavor without being overly greasy. I modify the herbs based on what i’ve got on hand. Basil and dill are both nice additions to the parsley that I’ve usually got tucked away in the crisper.
Since this is currently my favorite salmon recipe, I’m going to play with some spin off recipes to use up my leftovers. I’ve been thinking that roasting more tomatoes, and then tossing this salmon into a pasta could be heavenly. Cold salmon can be so delightful, and perfect for summer nights! I’ll let you know how it turns out. If I share it here, you’ll know it’s a keeper.
I served this Salmon with Roasted Tomatoes with salt potatoes and green beans. A simple lettuce salad, or some cooked spinach would accompany this dish well too. This entire meal comes together in about half an hour.
Salmon with Roasted Tomatoes
This Salmon is baked to perfection, with a light butter flavor and the sweet combination of roasted tomatoes. This dish is wonderful for entertaining.
Ingredients
- 2 lbs Salmon filet
- 1 tbsp olive oil
- 10-12 cherry tomatoes halved
- 1 tbsp butter sliced thin
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh basil chopped
- salt and pepper to taste
Instructions

Preheat oven at 425 degrees.

Rinse salmon in cool water, and pat dry with paper towels. Place on foil or parchment lined baking sheet.

Drizzle oil on salmon.

Arrange tomatoes on salmon. Add pats of butter.

Sprinkle with fresh herbs, salt and pepper

Bake on middle rack of oven for 17-20 minutes. Check readiness with fork in thick piece of salmon. The fish should flake apart naturally when it is cooked.
